We use only the highest quality cuts of sashimi-grade seafood in our bowls. We also serve alternative proteins including poached shrimp, sous-vide chicken and many vegan options. Every morning, our trained chefs slice, dice, and chop fresh produce, using these whole ingredients to make our handcrafted sauces. Our Yellowfin Tuna is sustainable, AAA Grade and is caught using manageable long line and hand line methods. Each shipment of tuna is imported from fishing vessels regulated by the Indian Ocean Tuna Commission (IOTC) and National Oceanic and Atmospheric Administration (NOAA). All shipments are declared and certified by the IOTC as maintaining standards in accordance with the maximum sustainable yield for that fish stock in agreement with the International Seafood Sustainability Foundation (ISSF).
Our premium Atlantic-Canadian salmon is sourced from the Bay of Fundy in Nova Scotia, which offers healthy, native stocks in the cold, clear waters of the Atlantic Ocean. We only serve salmon that is raised on a natural diet from sustainable sources, and hormone, antibiotic, and pesticide free. Each shipment of salmon is certified by Best Aquaculture Practices (BAP) which is the world’s most trusted aquaculture certification program.
